A recipe serves
4 persons
100g Rock Melon
/scooped round into small balls
(best with parisinne knife)
100g orange segments
100g strawberries /cut into ¼
3g mint leaves/ fine julienne
60ml lime or lemon juice
2-4g fresh green pepper corn or whole peppercorn in brine/glass
jar/slightly crashed
180ml fresh orange juice
60g fine granulated sugar
4 scoops of vanilla ice cream
Marinate together
the above mentioned fruits with the mint, lime, orange juice,
green pepper corn and sugar and set aside into a chiller for
2 hours to make sure the fruits are really cold, remove from
the chiller and serve in frozen dessert glasses,
Top each portion with a scoop of vanilla ice cream and garnish
with fresh mint leaves .
