Italian Al Fresco Cuisine
For two regular size pizzas (26-28 cm each)
Pizza Dough
165g white flour
30ml olive oil
2.5g salt
Pinch of sugar
4g dry yeast
75-85ml warm water
5g green olives /chopped
1g fresh basil/fine julienne
1g fresh thyme
Pizza Tomato Sauce
25ml olive oil
1 medium size onion / diced
100g very rip tomatoes/peeled and deseeded
100g peeled tomato/can passed to a fine strainer
50 ml strong vegetable stock
1g dry or fresh thyme
1g dry or fresh oregano
Pizza Topping
30g green baby asparagus/blanched & cut in half
30g zucchini/julienne
30g fresh spinach/blanched
40g mixed bell peppers/julienne
20g red onion/sliced in rings
40g broccoli/blanched
50g black & green olives/deseeded
50g palm hearts/ sliced
2g red chili /sliced
80g mozzarella cheese/ grated
2g fresh basil/tired leaves
2g dry or fresh oregano
10 ml extra virgin olive oil
Sieve the flour into a large bowl, mix ¼ of the
warm water with the dry yeast and poor onto the flour, let
it stand at a warm place, to prove for about 15 minutes.
Add all the other ingredients and mix it to a firm piece
of dough. Let it prove again covered with a kitchen towel
at a warm place for about 15-20 minutes or till the dough
has doubled up on size. Divide into 2 equal pieces, roll
them with a rolling pin into 2 slim round pizza bases and
place them into a slightly greased pizza pan
Prepare your tomato sauce which can be best done a day in
advance,
Heat oil in a medium size cooking pot, add onion and glaze
them for about 8 minutes without getting brown add all the
above mentioned ingredients and bring to boiling point.
Keep the sauce cooking on medium fire for about an hour,
keep the pot covered but stir well every 8-10 minutes for
the sauce not to set, season to your liking with salt and
pepper.
Top your pizza dough base with room temperature tomato sauce
and arrange your selection of vegetable nicely, top with
cheese as well and last drizzle herbs and olive oil,
Bake in a preheated oven by 220-240 Celsius for about 15-20
minutes or till the cheese is melted and starts getting
a light brown color.
