VEGETABLE SOUP "MOYASHI SOBA" STYLE

A recipe serves 4 persons

Ingredients

For The Vegetable Stock
15ml Sunflower Oil
120g Pickled Ginger
2 Finely chopped onions
2 Green chillies /cut in half
20g Miso paste
10g Lemon grass
20g Spring Onion/white part
20ml Mirin seasoning
30ml Japanese Soy Sauce
500ml Vegetable stock
Soup Vegetable & Others
100g Zucchini Julienne
100g Snow Peas (Mange Tout)
80g Fresh Mushrooms into ¼
80g Green peas
80g Bean sprouts
60g Leek (white part only) julienne
10g Chopped & roasted garlic
2g Coriander leaves
5g Seaweed (Nori leaves)
80g Tofu
80g soba (buckwheat noodles)

Method

Heat a cooking pot add the oil, brown, onion, ginger, chilli, spring onion, and miso paste for 2-3 minutes, pour mirin, soy sauce and vegetable stock, bring to boiling point and keep on slow fire for 20 minutes,
Poach all your vegetables for maximum 2 minutes; boil your soba, chock down your vegetable and noodles in ice water and strain.

Place all your vegetable divided into 4 large Japanese soup bowls, as well the tofu, last the soba noodles,
Pour on top your boiling hot vegetable stock and top with Nori leaves and coriander, serve hot with chop sticks.
